Caribbean Gazpacho with Avocado Salsa

A fresh soup full or nutrients, fiber and great taste!

Ingredients you will need are;

1/2 cucumber, finely diced

1/4 pineapple, finely diced

2 plum tomatoes, finely diced

1 green onion, chopped

2 tablespoons freshly chopped mint

1 cup tomato or vegetable juice

1 cup pineapple juice

1 teaspoon no-added-salt Worcestershire sauce

Tabasco sauce

Avocado Salso;

1 avocado, diced

1 tablespoon freshly chopped cilantro

sea salt and black pepper

1 teaspoon lime juice

1) Place the cucumber, pineapple, mango, red pepper, tomatoes, green onion, mint, cilantro, tomato juice, and pineapple juice in a blender and blend until combined.  

2) Place avocado, cilantro, salt, pepper, and lime juice in a bowl and mix to combine.

3) To serve, ladle the soup mixture into a bowl.  Season with Worcestershire sauce and top with a spoonful of the Avocado Salsa.
