The Chicken Dance With A Fruit Salsa Twist

Has chicken become the boring meat?  Not here it isn't!  Let's add a bit of zing into that chicken.

CHICKEN BREAST WITH FRUIT SALSA

The things you will need;

4 skinless organic free-range chicken breast fillets

juice of 1/2 lemon

zest of 1/2 lemon

juice of 1/2 orange

zest of 1/2 orange

1 tablespoon chopped fresh mint

2 tablespoons chopped fresh cilantro

1 clove garlic, crushed

2 tablespoons extra-virgin olive oil

SALSA

1 medium mango, cubed

1/4 cup chopped fresh cilantro

3 green onions, chopped

1/2 cup chopped pineapple

1 small red pepper, chopped

1 small tomato, deseeded and chopped

1 teaspoon extra-virgin olive oil

1 clove garlic, crushed

sea salt and pepper

1 teaspoon honey

juice of 1/2 lemon

1 jalapeno chili, deseeded and finely chopped

1.  Combine all the chicken ingredients in a ziplock bag.  Refrigerate for a few hours, up to 24 hours.

2. Put a little olive oil in a saucepan.  Heat on stovetop until sizzling.  Pour contents of ziplock bag, including chicken into saucepan.  Cook on stovetop until chicken is seared.  Remove from heat.

3. Place in an oven at 375 F/ 190 C and cook until chicken is done, approximately 20 minutes.  Cool for 5 minutes.

4.  Meanwhile, mix all salsa ingredients together.  Chill until chicken is ready.

5.  Serve chicken with salsa spooned on top.  Accompany with wholewheat couscous.
